Sautéed Arbi Fries

Here's a quick and healthy version of French Fries that you can easily prepare and relish at home, guilt-free.

Preparation time: 10 minutes

Ingredients:

Arbi (Taro or Colocasia Roots): 250 gm

Oil: 1 tsp

Cumin Seeds and Black Mustard Seeds: 1/2 tsp each

Salt, Turmeric, Chilli Powder and Garam Masala: To taste

Lemon juice: 1/2 tsp

Curry leaves: A few

Corriander for garnishing

Peel the arbi and wash well in cold water. Then proceed to chop them as you would chop potatoes for French Fries. Put the arbi in a microwave-safe container and microwave for 2 to 3 minutes. In the meanwhile heat the oil in a pan. Add some cumin and mustard seeds followed by the curry leaves. A few seconds later, add the microwaved arbi in the pan. Next add the salt, turmeric, chilli poweder and garam masala and mix well. Sauté the arbi for a few minutes depending on how crispy you'd like the fries to be. Add the lemon juice and garnish with corriander just before serving.
