Apple Cucumber Salad

Apple Cucumber Salad - an unlikely combination, but surely this is a simple, tasty, and healthy bowl of goodness. This recipe is good for those looking at weight loss, one-bowl meals, power-packed breakfast or just something yummy and healthy to fill in the hunger pang! And to our delight, all the ingredients are available to us round the year, so it can be had in any season.

Ingredients  :

> 1 medium-size red / green apple - finely chopped

> 1 green cucumber - peeled and finely chopped

> 1/2 tomato - deseeded & finely chopped

> 2 tbsp cabbage - finely chopped

> (optional)  1 tbspn red onions - finely chopped

> recommended addition - tofu / paneer 50 gms, chopped in small cubes

> to add a zing of freshness few roughly chopped basil leaves 

> some black seasame seeds to garnish

For the dressing :

> 1.5 tsp extra virgin olive oil

> juice of 1/2 a lemon

> a pinch of white pepper powder

> a pinch of rock salt

Preparation:

 In a salad bowl, add the chopped apples, cucumber, tomato, onion, cabbage, paneer/tofu & basil leaves. Mix well. In a small glass bowl or jar, add the ingredients for the dressing and some of the black sesame seeds and stir it well. Add this to the salad bowl and give it a good mix. Garnish with few basil leaves and drizzle some black sesame seeds. Serve the salad immediately to savour the fresh and crisp bowl of goodness :)

You can try some variations by adding or replacing a few veggies.
