Comfort food on a rainy afternoon need not always be something unhealthy. Instead, how about taking two typical recipes and combining them for a healthy and yummy preparation?

1 cup daliya

2 cups water

Chopped green chillies

Chopped vegetables (onion, tomato, carrot, beans and some peas)

2 tsp oil

A pinch of red chilly powder, garam masala, asafetida, turmeric and salt to taste

A pinch of cumin and mustard seeds

Preparation –

Add 1 tsp oil to a pan and sauté the daliya on medium flame until it’s slightly brown. Keep this aside to cool down and in the meanwhile heat 1 tsp oil in a pressure cooker. Add the mustard and cumin seeds followed by the chopped vegetables once the oil is hot. Now sprinkle the spices and salt as you sauté the vegetables before adding the daliya in the cooker. Pour in 2 cups of water and let the daliya and vegetables pressure cook for at least two whistles. You can garnish the upma with coriander before serving it while still hot.
