    With the temperatures going up , this chilled soup is perfect for the hot summer days. !!    CHILLED CUCUMBER SOUP    2 cup Greek yogurt 1 cup  vegetable broth 2 cucumbers 4 green onions 2 tbsp. chopped fresh dill 2 tbsp. chopped fresh parsley 4 tsp. fresh lemon juice 2 tsp. salt   DIRECTIONS   In a large bowl, combine Greek yogurt and vegetable broth; set aside. In a food processor, purée 1 peeled, diced cucumber, 2 sliced green onions, chopped fresh dill, and chopped fresh parsley. Add the cucumber mixture, fresh lemon juice, and salt to the yogurt mixture; whisk to combine. Stir in 1 more peeled, diced cucumber and 2 more sliced green onions; refrigerate for 1 hour. Garnish each serving with chopped dill and some croutons ( toasted bread cut into squares )

    Grilled Garlic Mushrooms and Tomatoes  Ingredients -  1 packet white button mushrooms ( quartered )  1-2 cloves of garlic  1 tbsp olive oil  1 tbsp balsamic vinegar  1/2 cup halved cherry tomatoes  1 tbsp chopped fresh parsley  Method -  1) Heat a griddle pan/ wok . In a medium bowl mix mushrooms, garlic , oil and vinegar  2) Place mushroom mixture on the griddle plate on medium heat and stirring once or twice , until mushrooms are tender , 3) Add tomatoes and cook and stir for 1 minute longer or until tomatoes are hot , pour into a serving bowl . Sprinkle with parsley . Serve with baguette / toasted bread or have it by itself !  12 serving  Prep time : 15 mins  Start to finish : 15 mins  tsp = teaspoon  tbsp= tablespoon

    Comfort food on a rainy afternoon need not always be something unhealthy. Instead, how about taking two typical recipes and combining them for a healthy and yummy preparation? Ingredients- 1 cup daliya 2 cups water Chopped green chillies Chopped vegetables (onion, tomato, carrot, beans and some peas) 2 tsp oil A pinch of red chilly powder, garam masala, asafetida, turmeric and salt to taste A pinch of cumin and mustard seeds Preparation – Add 1 tsp oil to a pan and sauté the daliya on medium flame until it’s slightly brown. Keep this aside to cool down and in the meanwhile heat 1 tsp oil in a pressure cooker. Add the mustard and cumin seeds followed by the chopped vegetables once the oil is hot. Now sprinkle the spices and salt as you sauté the vegetables before adding the daliya in the cooker. Pour in 2 cups of water and let the daliya and vegetables pressure cook for at least two whistles. You can garnish the upma with coriander before serving it while still hot.

    THE COVETED KADHA The weather is giving every household reasons to bunk school, work and activities. Doctor visits are soaring and most ladies of the house have their hands full with routine plus the sickness. Finding myself in a similar situation, I decided to re-visit an age old therapy. A coveted hand-me-down recipe for the “Kadha” that works like magic for any kind of physical discomfort. Passed on for generations, this one has to be a full proof home remedy. Ingredients: 1.5 cups of filtered water ½ tea spoon Turmeric A small piece of Ginger (approximately an inch) grated A tea spoon full of Ajwain seeds. Also known as Ajowan Caraway A small piece of Cinnamon (approximately an inch), or even cinnamon powder will do 2 tea spoons of Honey ¼ tea spoon Soonth Powder. Also known as dried ginger A few leaves of Tulsi. Also known as Holy Basil.  Preparation: In a utensil, add everything one by one to the 1.5 cups of water and start heating the concoction on a medium flame.

  • Sautéed Arbi Fries

    Here's a quick and healthy version of French Fries that you can easily prepare and relish at home, guilt-free. Preparation time: 10 minutes Ingredients: Arbi (Taro or Colocasia Roots): 250 gm Oil: 1 tsp Cumin Seeds and Black Mustard Seeds: 1/2 tsp each Salt, Turmeric, Chilli Powder and Garam Masala: To taste Lemon juice: 1/2 tsp Curry leaves: A few Corriander for garnishing Peel the arbi and wash well in cold water. Then proceed to chop them as you would chop potatoes for French Fries. Put the arbi in a microwave-safe container and microwave for 2 to 3 minutes. In the meanwhile heat the oil in a pan. Add some cumin and mustard seeds followed by the curry leaves. A few seconds later, add the microwaved arbi in the pan. Next add the salt, turmeric, chilli poweder and garam masala and mix well. Sauté the arbi for a few minutes depending on how crispy you'd like the fries to be. Add the lemon juice and garnish with corriander just before serving.

    Step 1 Preheat oven to 180C/160C fan-forced. Heat oil in a large non-stick frying pan over medium-high heat. Add onion, garlic, thyme, carrot and celery. Cook, stirring, for 5 minutes or until onion has softened. Increase heat to high. Add mince. Cook, stirring with a wooden spoon to break up mince, for 5 minutes or until browned. Stir in tomato paste. Add stock and worcestershire sauce. Reduce heat to low. Simmer, covered, for 12 to 15 minutes or until thickened. Step 2 Meanwhile, place potato and pumpkin in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Simmer for 12 to 15 minutes or until tender, adding peas for the last 1 minute. Drain. Return to pan. Add half the cheese. Mash until smooth. Season with pepper. Step 3 Divide mince between six 3/4 cup-capacity ovenproof dishes. Top with mash. Sprinkle with remaining cheese. Place on a large baking tray. Bake for 20 to 25 minutes or until cheese is melted and golden. Cool for 5 minutes. Serve w

    Toss up a quick salad for your lunch! Ingredients: Iceberg Lettuce, Red Green & Yellow Peppers, Cucumber, Cherry Tomatoes, Mixed Sprouts, Tofu, white Vinegar, salt, Honey, Mixed Herbs, Chilli Flakes. Procedure: Separate the Lettuce and chop it (not too fine), chop the three coloured peppers and cucumber into cubes. Chop the cherry tomatoes in two halves. Boil the mixed sprouts (not too soft), dice the tofu. For the dressing: Mix one table spoon honey with a table spoon of Vinegar, add some salt to taste, sprinkle some mixed hers and chilli flakes. Mix the dressing properly. In a big salad bowl toss all the vegetables with the sprouts and the tofu and add the dressing to the salad just before serving. Enjoy this crunchy, healthy, full of protein and refreshing salad anywhere, anytime.

    Pizza cubes with red sauce (serves 2) Ingredients for red sauce: 5-6 tablespoons of oil, 1 diced onion, 1 diced capsicum, 2-3 cups of boiled milk, salt to taste, 1-2 tablespoon/s of all purpose flour i.e. maida, 4-5 tablespoons of tomato ketchup. (you can also add herbs and cheese if you want to enhance the taste and make the sauce more creamier.) Ingredients for pizza cubes: 2 pizza bases and 1/2-1 tablespoon butter. Procedure: 1. Heat a sauce pan and add 5-6 tablespoons of oil. 2. Once the oil becomes hot add 1 diced onion and keep frying till it becomes light pink. 3. Then add 1 diced capsicum and fry it as well. 4. After 3 minutes add 3-4 cups of boiled milk and add salt and stir it for 2 minutes. 5. To thicken the sauce add 1-2 tablespoon/s of all purpose flour. 6.Keep stirring the sauce and check its consistency. 7.Once the sauce thickens, let it cool down and then add 4-5 tablespoons of tomato ketchup. 8.On the other side of the cook top heat a frypan and the 2 pizza bases alternatively in the butter

    Ingredients: Servings: 4 Units: US | Metric 2 tablespoons flour 1 teaspoon salt 1/2 teaspoon cayenne pepper 1 lb boneless skinless chicken breast, cut into 1 1/2-inch pieces 2 tablespoons canola oil 1 tablespoon curry powder 1 medium onion, sliced 2 garlic cloves, minced 1 cup chicken broth 1/3 cup golden raisin 1 1/2 tablespoons tomato paste 1/4 cup chopped fresh cilantro 1/4 cup plain nonfat yogurt Directions: 1 Mix together flour, salt and cayenne pepper in a plastic bag; add chicken in small batches, shaking to coat. 2 Heat oil in a large skillet over medium-high heat. 3 Add chicken and cook until lightly browned; then add curry powder and toss to coat. 4 Remove from pan. 5 Add onion and garlic to pan, adding a little more oil if necessary, and cook for 2 minutes, then add broth, raisins, and tomato paste. 6 Return chicken to pan and simmer uncovered for 8 minutes

      First make the relish: heat oil in a large frying pan and add the cumin. Let it cook for a moment, then throw in the bay, garlic, shallots and chilli. Cook for 2 mins until soft but not coloured, then add the celery and tomatoes. Sweat everything down gently for 20-30 mins until the tomatoes lose their shape. Remove from the heat, season and leave to cool. This can be made a few days in advance and kept in the fridge. To make the burgers, mix the egg yolks in a large bowl with the oyster sauce and soaked breadcrumbs. Season with lots of fresh, black pepper then add the meat, breaking it up a little. Mix everything, trying not to overwork the mixture or the burger will become heavy.

    Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until tender yet firm to the bit, 8 to 10 minutes; drain. Heat olive oil in a large skillet over medium-high heat. Add onion and garlic; saute until fragrant, about 2 minutes. Stir in the chicken and cook, stirring occasionally, until chicken is no longer pink in the center and the juices run clear, about 5 to 6 minutes. Reduce heat to medium-low; add artichoke hearts, tomato, feta cheese, parsley, lemon juice, oregano, and cooked pasta. Cook and stir until heated through, about 2 to 3 minutes. Remove from heat, season with salt and pepper, and garnish with lemon wedges.
